Soooo, my daughter has absconded with my prized Canon Rebel that I use for my foodie blog, as she’s flown off to Texas to record her adventures in Austin, Wimberley, and San Antonio for a week. I don’t know why I let her take it. So that left me without recording anything I made this week, but luckily had a few downloaded pics of some homemade Chimichurri sauce I made last weekend for some grilled Ribeyes. Unfortunately I only took pics of the final product and not the “making” of it. I’m sure you’ll live. 🙂
This is a very versatile, slightly spicy sauce that can be used as a topping on any grilled (or otherwise) protein, like steak, chicken, or fish. It can also be used as an overnight marinade, which I also used it for later in the week for a tough cut of meat. It’s a winning combination of flavors. This will keep two to three weeks in the fridge if you keep adding a little oil to keep it covered. When you want to use it for a recipe, just take it out of the fridge at least an hour beforehand to let the oil warm and loosen up and then give it a good shake or stir. This is also best made at least a day or two ahead to let the flavors meld.
I used some cilantro from my garden along with the parsley but if you are in the “cilantro-hating” camp you can also sub some spicy arugula or other green. It’s all good! I also used my spicy oregano plant (as opposed to just regular oregano) to give it an added kick.

Here is what I did:
Chimichurri Sauce
1 cup fresh parsley
1/4 cup fresh cilantro (sub arugala, more parsley or other green if you don’t like it)
1/2 cup onion, chopped rough
2 garlic cloves
About 2 teaspoons fresh oregano leaves
LOTS of ground black pepper, at least 1/2 teaspoon or more
1/2 teaspoon crushed red chile flakes
Sea or kosher salt, to taste
1/2 cup red wine vinegar (or white wine vinegar with a splash of red wine, or all white)
1/2 to 3/4 cup extra virgin olive oil, or until sauce is covered
Combine all ingredients in a food processor or blender until finely minced, scraping down the sides as needed. Taste for additional seasonings, and add as needed.
Allow to stand for 30 minutes, then add more oil after rest time if it’s not covered with at least 1/4 inch of oil.
Cover and chill (I put mine in a Bell canning jar) for at least 3 hours or overnight. Overnight is better. Bring to room temperature at least an hour before serving. Serve over grilled steak, chicken, or fish, or use it as a marinade. Enjoy!

I did not know there was such a thing as spicy oregano. Learn something know. I love your spicy chimichurri, I am on the cilantro hating (dislike) fence. Sometimes I don’t mind in small amounts. I think with everthing included in this condiment I would like, it all balances out very nicely I am sure. Yum to rib eye and chimichurri. I have a Canon also and don’t use it in favor of my iphone. I can’t figure out how to get lighting right when I shoot in the house, I’m fine outside but I hardly ever take outdoor photo’s.

I have my camera in auto and thought that would mKe it easy. I also have a rebel an older model d4 maybe can’t remember but the photos I take indoors just don’t look as good as the ones on my iPhone not crisp and clear not sure why will look for that book thanks

Hi Suzanne, it may also be the indoor light conditions. My photos are so much better now that I use ‘daylight’ studio lights in my kitchen. When using a semi-professional camera, it also pays off to learn about aperture, shutter speed, ISO, white balance and the like. Not to mention using the right lense: 50 mm is what most food bloggers use. The camera must be at soom minimum distance to be able to focus, e.g. 18 inches for my 50 mm lense. Another good book is Understanding Exposure by Bryan Peterson.

Looks delicious. I LOVE CHIMICHURRI!! Looks like you cooked the perfect steak too. The chimichurri would be really good with plantain chips too as an appetizer. I am so glad to finally discover and grow all the spicy basil, oregano and greens. Is it something new-I don’t remember ever seeing them before this year. I am growing the spicy basil and it seems to tolerate water better than the regular basil. My regular basil was always finicky when it came to watering, however, I found that if I gor basil from seed it is more tolerant. I know you are going to miss your camera-but she will have so much fun. I adore Wimberley-charming little town. Glad they have recovered from the flooding. Maybe she will let you post some of the things from your camera. 🙂

Thank you so much! Yes Wimberley is quite quaint. My parents have lived there for over 30 years. Luckily they live up on a hill so weren’t affected by the flooding but it’s such shame all those gorgeous cypress trees were wiped out along all the rivers.

I was just thinking about learning to make new sauces. I recently started making my own barbecue sauce and it’s so much better than the bottled versions. I think I could handle this one!

Chimichurri sauce is so good on grilled meats. Your recipe is very similar to what I prepare but I haven’t ever put onion in mine…I’ll have to give it a try.

I have also abandoned my Canon for my iPhone- crazy. It’s wonderful that you are able to trust your daughter with something so special to you.
I love your sauce- it is truly delicious on anything!! (Love that you stored it in a jar too- that’s my style. 🙂 Jars are taking over my house!)
