One-Pot Kielbasa and Cabbage Skillet

Well here’s a quick Friday night recipe, as I will be going to my FOURTH exercise class in the morning (along with my daughter, she signed up YAY!) and then I’ll be busy making lists and packing to bring our boat to the coast on Sunday, staying until Tuesday. We’ll be pulling in the RV from higher ground that’s parked up the street down there away from the flood zone, and assessing the damage from the winter flooding. We already found out our nice deck hubby built 4th of July last year got washed away in the flooding. Boo hiss!

It was a day or so work for my hubby, and the majority of the wood was the other half of our 20-foot dock in the river that kept breaking in half, and this half had been sitting around upside down on the property for over 6 years. From what we hear, the other 10-foot dock is still on the property, whew! So it wasn’t a huge loss, except we had strapped down a plastic storage shed to the top of it that contained our crab propane pot and burner and my crawdad pot, among other things. I was able to replace the crab propane pot and unit with one on on half-price at Ace Hardware. Still have to replace my crawdad pot. I have no idea what else was in there until we get down there. I should take a picture of contents of everything before we pull out each year!

But, life goes on. I’m ready to go unplugged again for awhile, my fave time of year! (No internet, cell, or TV service over there, darn. LOL.) Don’t worry, I’ll be checking in occasionally and trying to post somewhat weekly in the meantime in between my real job. Enjoy the recipe!

One-Pot Kielbasa and Cabbage Skillet

7 ounces cooked kielbasa sausage, turkey or otherwise (Half a horseshoe). Freeze the other half for future use
1 tablespoon bacon grease (or substitute oil of choice)
1/2 head small cabbage, coarsely chopped
1/2 large red (or sweet yellow or both) onion, coarsely chopped
1 tablespoon minced garlic (or two cloves minced)
Ground black pepper, to taste
2 teaspoons sugar
2 teaspoons white vinegar plus a few tablespoons of water, as needed
1 teaspoon spicy or grainy brown or Dijon mustard
Cooked mashed potatoes, for serving (optional)

Slice kielbasa into rounds in your size of choice. Heat bacon grease (or oil) in a large nonstick skillet over medium­high. Add kielbasa, chopped cabbage, chopped onion, minced garlic, and ground black pepper, to taste. Stir to combine, and cook for about 10 to 15 minutes until sausage is browned and cabbage is starting to wilt, stirring occasionally. (I actually added the cabbage a bit later but adjust accordingly.)

Mix in the sugar, vinegar, and mustard, then cook and stir for a minute or so. Reduce heat a bit, then add a couple of tablespoons of water and cover to help steam the cabbage. Continue to cook covered, until cabbage is done to your liking, adding additional water as needed.

Uncover, remove from heat, and serve immediately over mashed potatoes or other grain/starch of choice, which is optional. I reheated some leftover potatoes.

White Bean and Sausage Crock Pot Soup

I made this soup a few weeks ago when the weather was dreadful and snowy. Then spring leapt out of nowhere and trees and flowers began budding and birds were singing their little hearts out. But alas, winter appears to be keeping its grip as a cold front will make it’s way down this week. We can only hope the fragile buds and flowers will hang on through it.

If it’s still a bit chilly in your neck of the woods, here’s a warming, hearty soup to tide you over until spring hits your area.

White Bean and Sausage Crock Pot Soup

2 cups dried Navy Beans, soaked overnight (or 2 cans white beans)
1/2 cup chopped onion
1 stalk celery, diced
1/2 cup chopped carrots
2 teaspoons minced garlic
1/2 teaspoon dried rosemary, crushed
Pinch of dried thyme, crushed
1 teaspoon dried parsley
5 cups homemade or low sodium chicken broth
1 can diced tomatoes, or 12 cherry tomatoes
7 ounces Turkey Sausage (1/2 link), sliced
Shredded Parmesan cheese, for serving

Drain and rinse the beans (either dried or canned) and add to the slow cooker. Toss everything else except the cheese into the pot, then set on low for 8 to 10 hours or high on 5-6 hours, That’s it! Serve with shredded Parmesan cheese, and crusty bread.

Caldo Verde – Sausage and Spinach Soup with Cauliflower

I think I’ve said the adage “Do as I Say and Not as I Do” many times here. Please listen to this advice. Not once, but TWICE I added the sliced sausage to the mix before blending the soup. I’m a bit daft that way, sometimes. So take my advice, and DO NOT ADD THE SAUSAGE to the soup until after you’ve blended it, OK? Otherwise you have to keep fishing it out of everything and placing it in a bowl. Good, we got that out of the way now.

This creamy soup was absolutely delicious, and nary a potato in sight for it which is the usual method to make it. Instead, cauliflower is first roasted and then blended with the stock to make a rich base for spinach and sausage. The flavors in this are complex and dreamy. I will make this again and not forget my own advice. 😉

Caldo Verde (Sausage and Spinach Soup with Cauliflower)

1 pound of cauliflower florets (from 1 small head)
1/2 teaspoon cumin
1 1/2 teaspoons smoked paprika
Salt and pepper, to taste
1 tablespoon olive oil (plus extra for roasting the cauliflower)
1/2 yellow onion, chopped
7 ounces (1/2 link) of a smoked turkey Kielbasa
2 garlic cloves, peeled and minced
1/4 teaspoon crushed red pepper flakes
4 to 6 cups homemade or low sodium chicken broth
5 ounce bag baby spinach
Large handful Italian parsley, chopped
Large handful of cilantro, chopped
1/8 cup fresh-squeezed lemon juice (about 1/2 small lemon)

Preheat oven to 450 degrees. Toss the cauliflower florets with cumin, smoked paprika, salt and pepper, and some good splashes of olive oil. Spread in a single layer in a roasting pan and roast in the oven for 30 minutes, flipping at the halfway mark. Remove from oven and set aside.

In a soup pot or Dutch over medium-high heat, saute the onion and Kielbasa in 1 tablespoon of olive oil until onions are tender and sausage is browned, about 10 minutes. Add the garlic and red pepper flakes and stir for about a minute more. Remove the mixture to a bowl. Now. Do not forget this step.

Add the roasted cauliflower and chicken broth to the pot (not the Kielbasa yet!), bring to a boil, reduce heat then simmer for about a half hour. Remove from the heat and puree in a blender or food processor (or use an immersion blender, which I don’t have.)

Return the blended soup to the pot over low heat. Add the sausage and onion mixture, the spinach, and the parsley and heat for about another 10 minutes until the spinach is wilted and soft. Remove from heat and stir in the chopped cilantro and lemon juice. Ladle into bowls and serve with thick slices of crusty, buttered bread. Welcome to my mouth, you complex creamy soup!

Pepperoni Pasta Salad

It was a pretty warmish day here yesterday, so I thought a summer salad meal was in order for dinner. I used to make this a lot when I was in college, but it’s slipped from my repertoire in the past many years and figured it was a good time to dredge it back up.  I had intentions of making home-made Italian salad dressing for this, but after all the chopping, slicing, and dicing I decided bottled dressing would do the trick just as well. I had a “light” bottle of Ken’s Steak House Italian with Basil and Romano, and I’m sure I couldn’t have done much better with what I had around in the kitchen. I have also made this salad with Kielbasa sausage, but but since we just had Smoked Sausage earlier in the week I decided to use the spicier Pepperoni.  The Pepperoni gives it a good tang so didn’t have to load it up with extra spices beyond black pepper. This makes a really large bowl of salad, and is perfect to take to potlucks and parties. No party here last night, but it made a refreshing dinner on the back porch.

Pepperoni Pasta Salad

1 box of tri-colored pasta
1 cucumber, diced
1 red or yellow bell pepper, chopped
1 large green onion, diced
1/3 large red onion, diced
1 small can of sliced black olives
4 oz. sliced Pepperoni, quartered
Cubed Colby Jack cheese
Shredded Parmesan cheese
Shredded sharp Cheddar cheese
3/4 cup Italian salad dressing
Black pepper to taste

Cook the pasta according to directions, and cool under running cold water. Set aside to drain while prepping the veggies. Mix all the ingredients in a large bowl, adding the various cheeses, salad dressing, and black pepper to taste. Just keep mixing in until it “tastes right.” You’ll want to prepare this a few hours before eating and store in the refrigerator so that the flavors can meld. When ready to eat, serve with a side of fresh fruit and bread, and you have a simple, delicious summer meal!

First off, I didn’t use a lot of seasoning in this since I figured the smoked sausage would impart a great deal of flavor along with the grilling. (It did) Second, I was quite surprised at how big my foil packet ended up. It was the size of a watermelon! I had already laid out the large piece of foil (doubled up since I didn’t have heavy-duty) and was still surprised how large it got. Next time I think I’ll try two smaller packets so it won’t take so long on the grill. The smoked sausage I used is one that looks like a Kielbasa — it comes in the horseshoe-like shape in a shrink-wrapped package, not the fresh sausage you find in casings.

Grilled Sausage and Vegetables in Foil Packet

1 tablespoon olive oil
Juice of 1 lemon
1 tablespoon minced garlic
Mrs. Dash Garlic and Herb, to taste
Black pepper, to taste
3 to 4 medium red potatoes
1 yellow, red, or orange bell pepper, chopped
1/2 sweet onion, chopped
1/2 carton grape tomatoes
5 large white mushrooms, quartered
1 large green onion, chopped
1 Smoked Sausage or Kielbasa link, cut into 1/2 to 1-inch chunks
1 tablespoon butter, cut into tiny chunks

In a rather large bowl, whisk the olive oil, lemon, garlic, Mrs. Dash, and black pepper until well combined. Add all the veggies and let them marinate while you pre-heat a grill to medium heat. I didn’t want to marinate the sausage in the oil since it already has enough fat in it. Prepare a large piece of aluminum foil — heavy duty if you have it or double up if you don’t — about 18-inches square, or two small pieces to fit everything in it. When ready to cook, add the sausage chunks and lightly toss around to distribute evenly. Evenly spread the food over the foil, leaving enough room to close and seal the packet. Distribute the tiny chunks of butter over the top, then seal the foil packet(s). Just make sure you crimp everything really good so you don’t leak and get a flare-up on the grill. Place the packet on the grill and close the lid for one hour, turning halfway through. If you use two packets I’m sure it would greatly reduce the cooking time. Both my husband and daughter raved at how good this was! We had enough leftovers for two people, so this will easily feed four to six people, depending on appetites. Happy Grilling!
