My life is a bit topsy-turvy these days, as I’ve taken on a seasonal job with the U.S. Postal Service as a Santa’s Elf to tide us over while my food cart is closed for the season. The problem is, these elves have to work the night shift in order to get Santa’s packages out and delivered during the day. So now I’m making dinner at 10 am or so in the morning, and doing odd things like decorating the Christmas tree at 3 in the morning on my nights off. (OK I’m kidding about the Santa’s Elf thing, but it sounds much more glamorous than Holiday Clerk Assistant, which is really no more than a mail sorter and package thrower…)

Most days my husband and I are like two ships passing in the night, but on one of our rare encounters recently we had a short discussion about fennel. He couldn’t find any when he needed some for a lasagna he made me for my birthday recently. Long story short, he bought some dried fennel, which made me think of a fresh fennel bulb, which I haven’t cooked with in ages. AND SO, I bought a fresh fennel bulb and decided to make this soup with some of our leftover Thanksgiving turkey. And my husband just LOVED this soup! (He had to reheat it since I made it so early in the day.) It has a very guest-worthy flavor with the addition of the fennel and sherry. I hope you enjoy it too!

Turkey, Mushroom and Wild Rice Creamy Soup

1 tablespoon butter
1 tablespoon oil
2 cups sliced and rough-chopped mushrooms (about 8 ounces)
3/4 cup diced onion
3/4 cup thin-sliced baby carrots
3/4 cup thin-sliced rough-chopped fennel bulb
3/4 cup think sliced celery
2 cloves minced garlic
A few sprigs fresh thyme
1/4 teaspoon dried chopped rosemary
1 bay leaf
5 cups turkey or chicken stock, homemade or good-quality
1 cup chopped turkey (can use more if you want)
3/4 cup wild rice mix, uncooked
1/4 teaspoon Worcestershire sauce
1/4 cup dry sherry
1/2 cup heavy cream or half and half
Salt and pepper, to taste

In a Dutch oven or soup pot, melt the butter and oil over medium and add the mushrooms, onion, carrots, fennel, and celery. Cook until the onions and celery are translucent, about 10 minutes. Add the garlic, thyme, rosemary, and bay leaf in the last minute or so.

Stir the rice into the vegetable mixture, then add the broth and Worcestershire. Bring to a low boil, then cover and lower the heat and simmer for about 45 minutes until the rice is somewhat tender. Uncover, then add the turkey, sherry and cream or half and half, bring to a low boil again, reduce heat and simmer for another 15 to 20 minutes until the rice is cooked through. Taste for seasoning, and add salt and pepper to taste. I meant to add some fresh parsley at the end, but totally forgot. Feel free to throw that in if you have it! Remove the thyme sprigs and bay leaf, and serve with hot crusty bread.

Spicy Black Bean and Sausage Soup with Roasted Garlic

You’d think being unemployed would have all kinds of perks, like lots of free time for cooking and blogging, right? Long story short, that is not the case, so my quest for easy and delicious dinners remains the same.

Here’s one I made a few weeks ago I had waiting in the wings (thank goodness because my spare time has been minimal) that is chock full of flavor and spice! This hearty soup was one of those welcome, warming dinners on a cold and dreary evening. I hope you think so too.

Spicy Black Bean and Sausage Soup with Roasted Garlic

8 ounces dried black beans, soaked overnight (or sub two cans)
6 cloves garlic, unpeeled, tips removed
Olive oil for garlic
1 tablespoon bacon grease or olive oil
1/2 cup chopped onion
1/2 cup chopped carrot
4 ounces ground spicy Italian sausage
1 chipotle in Adobo sauce, minced plus one tablespoon of the sauce
1/4 teaspoon smoked paprika
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper
4 cups ham or chicken stock
1 14.5 ounce can tomatoes with liquid (I used my homemade canned tomatoes)
1 tablespoon dry sherry or apple cider vinegar
Salt, to taste
Lime wedges, cilantro, sour cream, for garnish

Drain and rinse beans (dried or canned) and set aside. Nestle cloves of garlic cut tips up in aluminum foil and drizzle olive oil over top. Wrap tightly and place in 350-degree toaster oven (or oven) for 25 minutes. Remove and set aside.

Meanwhile, heat the tablespoon bacon grease or olive oil in a Dutch oven or soup pot over medium heat. Add the onions, carrots and ground sausage, stirring until sausage is cooked through. Drain any grease, if necessary. Stir in the chipotle and sauce, smoked paprika, cumin, and cayenne pepper until combined and fragrant.

Pour in the stock, then squeeze the cloves of roasted garlic out of their skins into the soup. Now add the beans. Bring up to a boil, then turn down and simmer until the beans are cooked through. For dried beans, this could take an hour or more depending on how old the beans are. Canned beans are ready when heated through.

Puree the tomatoes with liquid in a container using an immersion blender stick, or a blender or food processor. (I used my new Cuisinart stick!) Once the beans are tender, pour in the tomatoes and sherry or vinegar. Taste for salt, and add if necessary.

Puree about half the soup using an immersion stick, or add to blender or food processor in batches. I like mine a bit chunky. Once soup has warmed through again, serve immediately and pass with lime wedges, cilantro, and sour cream.

Spicy Chicken Florentine

We survived the Snowmaggedon/Snowcapolypse where I live, where over 60 inches of snow has dumped on us in the past month and a half, an event that hasn’t happened here since 1901 according to records.

Snowmaggedon ~ A friend joked this looked like a bunch of pregnant woman got snowed on while sitting around our firepit. Those were empty chairs before the snow.

We had a near tragedy, where a school’s gym roof collapsed entirely, but overnight when thank goodness nobody occupied it. In the morning it is usually teeming with kids waiting for the school bell to ring. It wasn’t discovered until all the kids had boarded buses for school, so all parents were notified to pick up their children immediately at all schools in town. Schools were closed for 8 days after that until all snow was removed from 38 school roofs (9 million square feet) and structures inspected and deemed safe. Whew! Dodged the bullet on that one!

Snow or no snow, we certainly had to eat during this event, and here is one of the recipes I came up with during our snowbound days with what I had on hand. This is a thumbs-up recipe from the hubby, yay! My only regret is not making more sauce, so I’ve adjusted the recipe below for that. I served this over cooked rice. Nummy and warming!

Spicy Chicken Florentine

For the casserole:
1 pound boneless, skinless chicken breasts
Ground black pepper and salt or Mrs. Dash
2 cloves garlic, peeled and minced, divided
1 tablespoon olive oil
1 tablespoon butter
1 14.5-ounce can of diced tomatoes, drained
16-ounces frozen spinach, thawed and squeezed dry
Large pinch of crushed red pepper flakes

For the sauce:
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon mustard powder
1/4 teaspoon ground white pepper
1/8 cup dry good-quality sherry (or chicken broth)
1 3/4 cups milk
1/2 cup grated block cheddar cheese
1/2 cup grated block Parmesan cheese
1/2 cup Panko breadcrumbs

Preheat the oven to 400 degrees F. Slice the chicken breast thin, and season with the pepper and salt or Mrs. Dash.

In a large skillet over medium high heat, add the oil and half the garlic and sear the chicken filets on each side until browned. Remove and set aside.

Add the drained tomatoes to the skillet along with rest of the garlic and simmer for a few minutes. Pour the tomatoes and garlic in the bottom of an oil-sprayed two-quart casserole.

To the skillet, add the spinach and the rest of the butter plus a large pinch of crushed red pepper flakes. Stir until butter is melted and spinach is heated through and incorporated. Layer on top of the tomatoes.

Next layer the chicken on top of the spinach.

For the sauce, melt the butter in a saucepan and add the flour, mustard powder, and white pepper, whisking until a paste forms. Pour in the milk and sherry or chicken broth, whisking constantly. Simmer over gentle heat while stirring until the sauce is to desired consistency. Pour the sauce evenly over the casserole.

Sprinkle the grated cheeses over the dish, then top with the Panko breadcrumbs. Bake for about 20 minutes, until casserole is heated through and top is browned and crispy. Serve over cooked rice or noodles.

‘Tis the season to be jolly! I scored big on some extra-large chicken wings in the half-price bin, and set out on a mission to find a method to cook them that did not involve Frank’s or BBQ sauce. Much to my delight, I stumbled upon a recipe made by a fellow foodie blogger I follow! Lea Ann over at Cooking on the Ranch shared her recipe for this earlier in the year, which was adapted from Saveur magazine. This chicken and sauce is no-lie finger-licking good! The hubs and I devoured this along with some rice pilaf and baby brussels sprouts, and sopped up the juices with some crusty garlic bread. I wish everyone a very Merry Christmas or whatever holiday you may celebrate this time of year, and a delightful Festivus for the rest of us!

Braised Chicken Wings in Garlic and Sherry
Adapted from Saveur

2 pounds extra-large chicken wings, or small chicken cut into pieces
Salt and ground black pepper, to taste
1⁄2 cup flour put in bowl or on plate
2 slices thick-cut bacon, roughly chopped
2 tablespoons grapeseed oil
5 cloves garlic, thinly sliced
1 cup homemade or low-sodium chicken stock
1⁄2 cup dry sherry
2 tbsp. unsalted butter, cut into 1⁄4″ cubes
2 tablespoons roughly chopped parsley, optional, for garnish
Crusty bread, for serving

Preheat oven to 350 degrees. Season chicken with salt and pepper, and dredge in flour; set aside. Cook the chopped bacon in a skillet over medium-high heat, stirring, until the fat renders, about 5 minutes. Using a slotted spoon, transfer bacon to a plate lined with paper towels and set aside.

Add oil to skillet with the bacon grease, and working in 2 batches, add chicken, and cook, turning once, until browned on both sides, about 12 minutes. Transfer to a plate and set aside.

Add garlic to the skillet and cook until golden brown, about 1-2 minutes. Do not let the garlic burn! Add stock and sherry, deglazing the pan with a wooden spoon to scrape up the crispy bits. Place chicken skin-side down in a roasting pan and pour the skillet juices over the chicken.

Place chicken in oven, and cook for 20 minutes. Remove from oven, flip chicken with tongs to skin-side up, then sprinkle with reserved bacon and dot with butter. Baste the chicken a couple of times until cooked through and skin is crispy, about 20 more minutes. Serve with crusty bread for sopping up the delicious juices.

Tri-tip Beef with Sugar Snap Peas

We had about a half-pound of tri-tip beef leftover that my hubby cooked up on the grill earlier in the week, the daughter was gone, and I needed to come up with something for dinner that was quick and easy. I also had a partial bag of sugar snap peas left in the fridge and a half bag of bean sprouts in the freezer. (Did you know you can freeze bean sprouts? But they need to be cooked after freezing, they won’t be good in a salad or sandwich.)

A quick search on the internet gave me this super-easy meal that was on the table in less than thirty minutes! It’s so quick you’ll want to start cooking your rice before making this, unless you are super-fortunate to also have some leftover rice in the fridge.

Tri-tip Beef with Sugar Snap Peas
Adapted from Beef with Snow Peas, Ree Drummond, The Pioneer Woman

1/2 pound leftover barbecued tri-tip beef (or any other cooked beef)
1/4 cup low sodium soy sauce
1 1/2 tablespoons sherry
1 tablespoon brown sugar
1 tablespoon cornstarch
1 teaspoon ground ginger
1 1/2 tablespoons olive oil, divided
6 ounces fresh sugar snap peas
4 ounces bean sprouts
3 green onions, cut into inch pieces on the diagonal
Crushed red pepper flakes, to taste
1 cup low sodium or homemade chicken or beef broth
Cooked rice, for serving.

Slice the cooked beef in very thin slices against the grain and set aside. Cut into bite size pieces too if you want. In a small bowl, mix the soy sauce, sherry, brown sugar, cornstarch, and ginger.

Heat a wok or other heavy bottomed skillet to medium-high heat and add a tablespoon of olive oil. Add the beef and let it sear on one side for a couple of minutes, then flip it over and sear for another minute or two. Remove meat from the pan and set aside.

Add the last half tablespoon of olive oil to the wok or skillet, then throw in the snow peas, bean sprouts, and green onions. Toss them around for a minute or two, then pour in the mixture from the bowl.

Next add the meat back in and sprinkle with some crushed red pepper flakes, to taste. Last, pour in the chicken broth, stir to combine, and simmer for a few minutes until the sauce has thickened. Remove from heat and serve immediately with cooked rice. Easy and delicious!

Busy, busy, busy! That’s what I’ve been lately, and when you’re busy it’s so nice to have a fairly quick and healthy casserole to whip together, just like this one. This is even something I wouldn’t mind cooking myself on this Mother’s Day (as long as I don’t have to do the dishes!). And Happy Mother’s Day to all mothers out there, be it mothers of humans, fur-kids, or nature! I hope you enjoy this recipe, this was a thumbs-up in my family all the way around.

Chicken Tetrazzini Casserole
Adapted from Cooking Light magazine

5 ounces uncooked linguine, snapped in half
2 1/2 tablespoons butter, divided
2 tablespoons flour
1 1/4 cups homemade or low-sodium chicken broth
1/2 cup Half and Half, or milk
1 ounce Neufchâtel cream cheese
1/2 cup grated Parmesan cheese, divided
Salt and pepper, to taste
4 ounces sliced mushrooms
1/2 cup chopped onions
2 teaspoons minced garlic
1 teaspoon fresh thyme, chopped
1/4 cup dry sherry
1 1/2 cups shredded cooked chicken breast
1/2 cup frozen peas
2-inch thick chunk French bread baguette, torn into chunks
1 teaspoon oil

Preheat oven to 375 degrees. Cook the pasta according to package directions, drain, and set aside.

Meanwhile, melt half the butter in a saucepan over medium heat. Stir in the flour and whisk for a couple of minutes until all combined. Pour in the chicken broth and milk, whisking constantly.

Bring up to a boil, then reduce heat and simmer 5 minutes, whisking occasionally. Stir in 1/4 cup of Parmesan cheese and the cream cheese until combined, then turn off heat and set aside.

In a large skillet over medium-high heat, add the rest of the butter. Add the mushrooms and saute for 3 to 5 minutes. Then add the onions, garlic, and thyme and saute for 5 more minutes. Add the sherry, then cook for a minute more.

Pour in the saucepan of milk/cheese mixture, the pasta, chicken, and peas. Toss to combine. Spoon the mixture into a 2-quart casserole coated with oil spray.

Place the torn bread pieces and the rest of the Parmesan cheese in a food processor and pulse until coarse crumbs form. Sprinkle evenly over the pasta. Bake for 30 minutes or until browned and bubbly.
