A big shout out goes to Gail at snapshotsincursive for prompting me to head to my local farmer’s market and pick up some pickling cucumbers. It was a beautiful day to stroll around the market! I also scored some garlic scapes, which I hear are great grilled and will be grilling those up tonight too to go with some BBQ beef.
I pretty much used my Spicy Dilly Pickle recipe for this, but used crushed red pepper flakes instead of dried red chiles as I didn’t have any. I also used fresh dill from my herb garden! I’ll be bringing a jar or two of these to my friends I am visiting on the coast tomorrow for a couple of days as a housewarming gift. (I’m also bringing a beautiful summer squash I also picked up.)
Do like I did and get out to your local farmer’s market now and pick up some great fresh veggies and fruits that are now available!
Spicy Refrigerated Dill Pickles
About 2 pounds fresh pickling cucumbers
1 clove of garlic per jar, peeled
1/8 teaspoon crushed red chile flakes per jar
Small handful of fresh dill, per jar
1/2 teaspoon black or mixed peppercorns per jar
1/2 teaspoon mustard seed per jar
5 cups water
5 cups white vinegar
1/2 cup of pickling salt
Wash and dry 4 pint canning jars. Cut the ends of the cucumbers and slice them in half. Drop the garlic cloves, chile flakes, dill, peppercorns, and mustard seed in each jar, then pack the cucumbers lengthwise over them. Bring the water, vinegar and salt to a boil then pour it over the cucumbers. Refrigerate for at least 12 hours or overnight. Keep in refrigerator and use within 2 to 3 weeks. Crunch!

LOL thanks Kat! It was quite quick and easy. Gail recommended pickling them as soon as possible so I hopped right on it (well almost) as soon as I got home from the market. 🙂

Go to the market soon as they only have a few week’s window of availability each year! Not sure if your season is different from Oregon’s though.

Yum!! Refrigerator pickles are so crisp and tasty and so easy. Bar Tartine in San Francisco makes refrigerator pickles from cauliflower, turnips, carrots, etc. Colorful and tasty.

Takes me back to the summers I would spend with my grandma in Georgia. We would go to the local farm or her back yard garden and buy lots of fresh fruits and veggies for her to pickle, jam and jar! Thank you!

I cannot believe how timely this post is! Another blogging friend posted a recipe for refrigerator dill pickles and, having made a couple batches, just told my friends that I’m making more but with a hot pepper or 2 in each jar. We then started talking about making dilly beans. My friend is going to follow a recipe that looks much like yours, with fresh dill. I’m going to follow the pickle used for the dill pickles and it uses dill seed. (Fresh dill is added but more for decoration than anything else.) This should be interesting. Either way, like yours, the spices are put in the jar and then the pickling liquid is poured. That is so much better than seasoning the liquid before filling the jars. If, like me, you’re always making too little liquid, it’s far easier to make more without worrying about the spices, too. Anyway, thanks for sharing both! 🙂

It’s a bit more time intensive (OK a LOT) but so worth it! When we used to grow green beans in our garden I would give jars and jars of them as gifts at Christmas time. This looks like such a fantastic and do-able recipe! I’m gonna have to make them for my pops! He loves pickles and recently introduced me to the peanut butter, mayo & pickle sandwich. How could I have lived to my age (let’s just say getting closer to 60 than 50) and never known about my Da’s penchant for pickles!!

That is so funny Mollie! Yes, it is an easy recipe and a sure winner. My mom introduced me to dill pickles at a young age, but this was a first for me to make them, and spicy to boot! YUM!
