Spicy Black Bean and Sausage Soup with Roasted Garlic

You’d think being unemployed would have all kinds of perks, like lots of free time for cooking and blogging, right? Long story short, that is not the case, so my quest for easy and delicious dinners remains the same.

Here’s one I made a few weeks ago I had waiting in the wings (thank goodness because my spare time has been minimal) that is chock full of flavor and spice! This hearty soup was one of those welcome, warming dinners on a cold and dreary evening. I hope you think so too.

Spicy Black Bean and Sausage Soup with Roasted Garlic

8 ounces dried black beans, soaked overnight (or sub two cans)
6 cloves garlic, unpeeled, tips removed
Olive oil for garlic
1 tablespoon bacon grease or olive oil
1/2 cup chopped onion
1/2 cup chopped carrot
4 ounces ground spicy Italian sausage
1 chipotle in Adobo sauce, minced plus one tablespoon of the sauce
1/4 teaspoon smoked paprika
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper
4 cups ham or chicken stock
1 14.5 ounce can tomatoes with liquid (I used my homemade canned tomatoes)
1 tablespoon dry sherry or apple cider vinegar
Salt, to taste
Lime wedges, cilantro, sour cream, for garnish

Drain and rinse beans (dried or canned) and set aside. Nestle cloves of garlic cut tips up in aluminum foil and drizzle olive oil over top. Wrap tightly and place in 350-degree toaster oven (or oven) for 25 minutes. Remove and set aside.

Meanwhile, heat the tablespoon bacon grease or olive oil in a Dutch oven or soup pot over medium heat. Add the onions, carrots and ground sausage, stirring until sausage is cooked through. Drain any grease, if necessary. Stir in the chipotle and sauce, smoked paprika, cumin, and cayenne pepper until combined and fragrant.

Pour in the stock, then squeeze the cloves of roasted garlic out of their skins into the soup. Now add the beans. Bring up to a boil, then turn down and simmer until the beans are cooked through. For dried beans, this could take an hour or more depending on how old the beans are. Canned beans are ready when heated through.

Puree the tomatoes with liquid in a container using an immersion blender stick, or a blender or food processor. (I used my new Cuisinart stick!) Once the beans are tender, pour in the tomatoes and sherry or vinegar. Taste for salt, and add if necessary.

Puree about half the soup using an immersion stick, or add to blender or food processor in batches. I like mine a bit chunky. Once soup has warmed through again, serve immediately and pass with lime wedges, cilantro, and sour cream.

Potato Leek and Broccoli Soup with Pancetta Bread Crumbs

We’re back from our 20th wedding anniversary trip to our RV property on the Siletz River on the Central Coast of Oregon. Not too newsworthy unless I mention the fact that I pretty much shattered my left middle finger on the second day there in a boat launch accident.  I had surgery on the finger the day after we got back, and am now entrapped in a traction device. I don’t have the sling anymore at least, that was just to hold up my arm until the nerve block wore off.  After the recipe so you get to look at a few of “exciting” photos of the trip if you want. 🙂

Yet, I’m feeling for ya’! So I’ll share a yummy soup recipe I made just before we left first. It’s the least I can do. I only got a couple of pics since I was also packing for the week.

p.s. I finally purchased a sous vide immersion circulator! I’ve been experimenting it (with the hubby’s help since I’m down to one hand, but so far so good!) Just had an awesome chuck roast beef stew cooked 26 hours at 165F then seared with pan gravy made from juices in bag. I’ll start posting those those types of recipes when I can. Picture-taking is mighty hard at the present. Typing with one hand is not exactly a picnic either…

Potato, Leek, and Broccoli Soup with Pancetta Bread Crumbs
Adapted from Food and Wine

3 cloves unpeeled garlic
3 tablespoons unsalted butter, divided
1 cup sliced leeks, white and light green parts only
1 pound Russet or other potatoes, peeled and chopped small
2 cups broccoli florets, coarsely chopped small
2 1/2 cups homemade chicken stock or low-sodium broth
1/2 cups Half and Half
Wedge of fresh-squeezed lemon juice
Salt or Mrs. Dash and freshly ground pepper, to taste
Handful of fresh parsley, chopped
1/2 cup cubed sourdough bread
1 tablespoon olive oil
1/8 cup finely chopped pancetta
2 teaspoons finely chopped fresh sage
1/2 teaspoon dried and crushed rosemary (or 1 teaspoon fresh)

Wrap garlic cloves in foil and bake at 400F degrees for 35 minutes. Remove and let cool then peel and add to a food processor or blender.

In a soup pot or Dutch oven, melt 2 tablespoons of the butter. Add the leeks, potatoes and broccoli and cook over medium-high heat for 10 minutes, stirring frequently, until the leeks start to soften. Add the chicken stock and 3 1/2 cups of water, cover and bring to a boil. Simmer over medium heat until all of the vegetables are tender, about 10 minutes.

Working in batches, add soup to the garlic in the food processor or blender, amd puree the soup until very smooth. Return the puree to the pot and stir in the Half and Half and wedge of lemon juice. Season the soup with salt or Mrs. Dash and pepper. Keep warm on low.

Meanwhile, pulse the bread cubes in a food processor until coarse crumbs form. In a skillet, melt the remaining tablespoon of butter in the tablespoon of oil. Add the pancetta, sage, rosemary and bread crumbs and cook over moderately high heat, stirring frequently, until the crumbs and pancetta are browned and crisp, about 10 minutes. Drain on paper towels.

Ladle the soup into bowls, garnish with the pancetta crumbs, and enjoy!

Baked Asparagus Fries and Roasted Garlic Lemon Dipping Sauce

I am all about adapting, and I think anyone who’s followed my blog knows this by now. My husband came home with some more beautiful, thin asparagus yesterday, and I also happened across a Pinterest post for baked asparagus “fries” with various homemade dipping sauces. Not having half the ingredients on hand didn’t stop me though. I chose the sauce I could actually make without having to run to the store. The process of making this really wasn’t all that long or tedious. I just loved the way the house smelled after roasting the garlic! Both my husband and daughter came out of the woodwork to ask me what I was making as the aroma wafted into their respective hiding places. We had some leftover steak and lasagna to use up, so we all chowed on these fries with our main course of choice.

Roasted Garlic Lemon Dipping Sauce

1 egg yolk
1 1/2 tablespoons minced garlic
1/4 cup mayonnaise
1 tablespoon lemon juice
2 tablespoons extra virgin olive oil
Salt and black pepper to taste

Baked Asparagus Fries

1 egg white
1/2 bunch of fresh thin asparagus, washed and trimmed
1/4 cup flour
1/4 cup fine seasoned bread crumbs (or seasoned Panko)
2 tablespoons grated Parmesan cheese
1/8 teaspoon garlic powder
Black pepper to taste
Spray olive oil

If your asparagus is not thin, then I would recommend slicing them in half lengthwise. Both recipes above use one egg, so start out by separating the egg yolk and white into two separate bowls. Next, place 1 1/2 tablespoons of jarred minced garlic in a small oven-proof bowl and roast at 350 for 10 minutes.  Remove from oven, then using the back of a spoon, crush the minced garlic into a paste. Add it to the bowl with the egg yolk, mayonnaise, lemon juice, olive oil, salt and black pepper. (I broke down and did use a little sea salt in this, as it really needed it. I figured the amount of salt was minimal for my husband, especially since it would be used as just a dipping sauce.) Whisk really well until fully combined. Put it in the refrigerator for about an hour.

Meanwhile, relax and enjoy a beverage of choice for a bit while you preheat the oven to 425 degrees. After your refreshment, whisk that egg white in the other bowl until frothy. On a plate, combine the flour, bread crumbs, Parmesan cheese,  garlic powder and pepper. Dip the asparagus spears into the egg white, then dredge through the bread crumb mixture until well coated. Place on  your largest spray-oil foil-lined baking sheet, then spray some more oil over all of them. You’ll lose some of the coating in this process, but don’t worry about it. Bake for 20 minutes. Serve with dipping sauce. It became apparent when I took them out of the oven I missed some spots with the oil, but nonetheless these were a HUGE hit!
